Sausage, Potato, & Leek Stew

I just finished making this soup and liked the results, so I thought I'd share. 




Sausage, Potato & Leek Stew

1 lb Turkey Kielbasa, sliced
1 lb Turkey Tasso, cubed
2 cups chopped white onions
2 cups chopped green bell pepper
2 cups celery
3 cups coarsely chopped leeks
2 large potatoes
2 tbsp cayenne pepper
1 tbsp basil
1 tbsp oregano
1 1/2 tbsp salt
1 tbsp olive oil
1 quart beef broth
water


Bring olive oil to a high heat and quickly add Kielbasa and Tasso, deglaze with 1/4 cup beef broth and add onions, bell pepper, celery, leeks and potatoes. Stir for 10-15 minutes, then add the rest of the beef broth. Add water as needed for desired consistency, add seasonings, and simmer for 3-4 hours. Serve warm, serve many.
